Here, in our latest Business of the Week feature, owners Amy and Nick Small tell us about running their own business, why they wanted to branch out into restaurants after running a bakery for 15 years, and how the first 12 months have gone.

Tell me a bit about your business

We are a family run, licensed bistro, specialising in Detroit pizzas, but also offer an extensive evening and daytime menu, with tater tots, burgers, homemade cakes and brownies and meringues. We have seating for 32 inside and 10 outside and we deliver a three-mile radius. We take orders for collections too. You can book tables or walk in, but we do advise booking at busy times. We use local suppliers for as much as we can - among them are Black Lodge Brewery for our draught beer, Adams & Russell for our coffee and Scott’s Butchers for our meat.

What do you do? What services do you provide?

Detroit pizzas, which are square pizzas, baked in a tin with a focaccia base. They have a crispy bottom and chewy cheese sides, with marinara sauce over the cheese not under. Everything is made on the premises. We make all our pizza bases, soups, baked goods and sauces. We do a full breakfast menu, lunch, snacks and dinner as well as coffee, draught beer and frozen cocktails.

Why did you decide to open your own business?

Having a bakery for 15 years supplying other businesses, we decided to branch out. We saw this Detroit pizza business for sale and loved the theme and background to it. We made a lot of changes but kept the main theme which of course is the Detroit pizza.

What’s your business background?

Amy has had her own bakery business for 15 years, supplying cafes, restaurants and hotels with meringues right across the north west and still supplies meringues now to a number of large restaurants in Liverpool, Wirral and Cheshire. Nick has his own business in the property sector so helps out at weekends at Three Dollar Bill.

Why this type of business?

We saw this for sale and thought it would be a great challenge for us. We closed it down for ten days and renovated, added a new menu and opened more hours.

What makes your business different to others in the same area/field? What sets your business apart from your competitors?

We are the only Detroit pizza restaurant or delivery in Wirral. Our pizzas are unique. The bases are all made earlier in the day in store. They take hours to make, ready to be topped for each order, and then baked again. It’s very rare we see one person finishing a full pizza to themselves in one sitting! They are perfect to share along with our sides.

Why do loyal customers return to your business?

Our food is all freshly made, top locally sourced ingredients, and it shows in our meals. We are also flexible with changes to meals to suit customers. Service is excellent - our team works so hard to produce freshly made unique food for every customer, and our front of house staff are friendly and accommodating, looking after every customer in our warm and cosy restaurant. We have lots of locals visiting, but also people travelling from miles around to try our pizzas.

What’s next? What do the next few months hold for you and your business?

We plan to extend the delivery area without compromising the quality of our food. We want to continue growing our menu and adding monthly pizza specials. We listen to our customers and what they would like to see on the menu, and we will keep offering twice weekly special offers and daily deals. We are looking forward to a busy Christmas period, with some new seasonal specials including a festive toastie for our daytime menu. We will be open New Year’s Eve for daytime and evening meals and deliveries too.
