THE new owners of a restaurant in Hoylake have given the venue a complete refurbishment and introduced a brunch-style menu.

Amy Small and her husband Nick, from Wallasey, took over the Three Dollar Bill restaurant on Market Street in Hoylake on November 1.

The couple's children, 19-year-old Tash and 15-year-old Harry will also be working in the restaurant when they are not in university and school.

Speaking to the Globe, Amy, 45, said: "It was a pizza place in the evening before we took over, so we have kept that going but also open in the day.

"I have been a baker for 15 years and supply lots of other restaurants with my meringues and cakes so we thought we would buy this venue so I can serve them from my own place."

Three Dollar Bill had a complete renovation and was shut for 10 days and Amy said they "completely ripped everything out so everything was new" but kept the original chefs so the restaurant is the same in the evening.

The restaurant's day-time menu sees their pizzas, Detroit-style pizzas, which are rectangular pan pizzas with a thick, crisp, chewy crust, served by the slice, fried chicken with maple syrup, salad, sourdough sandwiches and coffee.

Amy added: "We are using all local suppliers and our coffee is from Adams & Russell and they came and trained us on the coffee machine.

"We now also have a full alcohol license."

Three Dollar Bill is open Tuesday-Sunday 10am-4pm, and will open 4pm-10pm on Thursdays, Fridays and Saturdays as a pizza restaurant.

Amy said: "It is really good and nice to be in Hoylake, it is always something I've wanted to do.

"It's been good working with the family, it's a massive change because none of them have ever done anything like this before.

"One of the reasons we did it was for the kids, to bring out their confidence, and it's worked."
