A WIRRAL baker, who offers a range of gluten-free, dairy-free, and vegan cakes, says her customers “can’t tell the difference”.

Cheryl Galer from Bidston began baking for the first time when the Covid-19 lockdown hit and, being celiac herself, she decided to delve into gluten-free baking.

The 46-year-old, who works for Aldi full-time, said she has since built up a loyal regular customer base of people needing her free-from products.

Cheryl told the Globe: “I’ve got a six-year-old daughter and a five-year-old granddaughter, so I thought during the lockdown I’d teach myself how to bake and I’d be able to make them cakes.

“Then once restrictions were lifted, I started bringing them into work, and then my colleagues started asking me if I could make them for different occasions. It just spiraled from being a bit of fun really.”

Like her customers, Cheryl is also gluten-intolerant so says she understands the importance of gluten-free bakes.

She said: “I decided to go fully-gluten free with my products because I didn’t want flour flying around my kitchen when I’m celiac. So literally everything I use is entirely gluten-free.

“A lot of customers who come and try them are always so happy because there’s a lot of people who can’t have gluten or dairy so it’s nice for me to get my cakes out there and show people, they can still be really nice and spoilt for choice.

“People are always telling me they can’t believe it’s gluten-free because gluten-free cakes get such a bad rep, and we usually hear that anything gluten-free is dry, bland, and has poor flavour but I’ve got a real passion for making quality flavourful cakes.”

While working full-time in Aldi, Cheryl also makes time to get her cakes out in the local community and has worked in markets across Wirral to showcase her products.

She said: “Ideally, I would like the cake business to pick up more so I can concentrate on it full-time because I know there is a big demand for gluten-free products.

“It’s great that a lot of places are offering gluten-free options now, but I know myself how common cross-contamination is and when you get home you end up in agony because people don’t really understand what it’s like.

“Whereas I put so much into my business and make sure that people don’t have to worry about cross-contamination. And my customers are always so grateful because they’ve found a baker who will bake a cake entirely to their needs that they can trust.”
